ingredients

  • 4 cups Ceres Organics White Stoneground Flour
  • 2 sachets (16g) Instant Dry Yeas
  • 2 Tbsp Ceres Organics Matcha Powder
  • ½ tsp Table Salt
  • 1 cup Soy Milk
  • 115g Butter
  • ½ cup White Sugar
  • 2 Eggs
  • ½ cup Ceres Organics White Stoneground Flour
  • 110g Dark Chocolate
  • 85g Butter
  • ½ cup Ceres Organics Coconut Sugar
  • 1 tsp Ceres Organics Cinnamon
  • 1 tsp Vanilla
  • 100g Butter
  • 125g Cream Cheese
  • 2 ½ cups Ceres Organics Icing Sugar
  • 1 tsp Ceres Organics Matcha Powder

method

  1. In a large bowl, combine the first measure of flour, yeast, first measure of matcha and salt. Whisk together to combine.
  2. Add the milk, white sugar and first measure of butter to a heatproof bowl and microwave for 90 seconds. Mix to melt the butter.
  3. Pour the milk mixture into the dry mix and stir with a knife to combine and form a sticky mixture. The dough will be difficult to mix but it will come together.
  4. Add the eggs to the dough and mix into the dough. Again, it will take some time for the eggs to become fully incorporated but it will get there.
  5. Sprinkle some of the second measure of flour on a clean bench top and add the rest to the dough. Turn out onto the bench and knead to incorporate. Keep adding the second measure of flour until the dough is still sticky but doesn't stick to your hands too much.
  6. Remove the dough from the bowl, clean the bowl then place the dough back in the bowl and set in a warm place to rise for 30 minutes.
  7. Whilst the dough is rising, soften the second measure of butter in the microwave. Add the cocoa powder, coconut sugar and cinnamon and mix to form a paste. This will be the filling for the scrolls.
  8. Roughly chop the dark chocolate into small pieces. Once dough has risen, roll the dough out onto a clean and lightly floured surface. Roll into a large rectangle that is about 1cm thick.
  9. Spread the chocolate paste onto the rectangle of dough to cover it, then sprinkle the dough with the chopped chocolate.
  10. Roll lengthwise to form a long log, then slice the log into 20 even pieces. Place in a dish or 2 lined with baking paper.
  11. Set aside to rise for a further 30 minutes. Preheat the oven to 180ºC. Bake the scrolls in the oven for 20-25 minutes until golden brown on top.
