Peanut Butter Bliss! The perfect nutrient dense snack to keep you satisfied. Pop them in lunchboxes or keep them on hand at work for that 3pm pick me up.

ingredients

  • 220g Ceres Organics Pitted Dates
  • 2 cups Water
  • 2 Tbsp Ceres Organics Coconut Oil
  • 3 Tbsp Ceres Organics Smooth Peanut Butter
  • 2 Tbsp Ceres Organics Cacao Powder
  • 1 & ½ Tbsp Ceres Organics Maple Syrup
  • 2 cups Ceres Organics Almond Meal
  • 30g 72% Dark Chocolate
  • 1 tsp Ceres Organics Coconut Oil (for drizzling mixture)
  • 1 Tbsp Ceres Organics Smooth Peanut Butter (for drizzling)

method

  1. Boil the water then pour over the dates. Cover with a lid for 5 minutes.
  2. Add the dates to a blender or food processor with the first measure of coconut oil, peanut butter, cacao powder and maple syrup. Blend on high speed until a sticky paste forms.
  3. Remove the date mix from the food processor or blender and add to a bowl with the almond meal. Mix to form a sticky but manageable mix.
  4. Roll the mixture into balls using a dessert spoon to make them even sized. Set aside in the fridge or freezer until firm.
  5. Melt the dark chocolate in the microwave then stir through the second measure of coconut oil. Drizzle the melted chocolate and peanut butter over the balls then serve. Enjoy!
