These tasty vegan vegetable fritters are an easy way to pack extra veggies into your lunchboxes. Filled with fibre and nutrients they make a delicious appetizer, side dish or snack!  

 

ingredients

  • 1 Tbsp Ceres Organics Ground Flaxseed
  • 3 Tbsp water
  • 1 medium courgette
  • 1 can Ceres Organics Corn Kernels
  • 1 spring onion
  • 1 cup Ceres Organics Buckwheat Flour
  • 2 tsp baking powder
  • ½ cup almond milk
  • 2 Tbsp Ceres Organics Olive Oil
  • 3 tsp minced garlic
  • 1 handful fresh coriander

method

  1. To make the "flax-egg" mix the ground flaxseed and water, then set aside to thicken.
  2. Grate the courgette, drain the corn, slice the spring onions and roughly chop the coriander.
  3. In a bowl, add the buckwheat flour, baking powder, flax egg, almond milk, half of the olive oil and garlic. Whisk until smooth.
  4. Gently stir in the courgette, corn, spring onion and coriander. Season the fritter mix with salt and pepper.
  5. Heat a non-stick frying pan on medium-high heat with the second half of the olive oil.
  6. Spoon heaped tablespoons of the mixture into the pan. Cook for 3-5 minutes on each side until golden. Serve hot and enjoy!
