These tasty fritters are an easy way to pack extra veggies into your lunchboxes. Filled with fibre and nutrients, they’re perfect for the whole family. 

ingredients

  • 1 ½ cups Ceres Organics Canned Corn
  • 1 cup Ceres Organics Stoneground Flour
  • ¼ cup Ceres Organics Coconut Milk
  • 2 tsp Ceres Organics Corn Starch
  • 1 tsp baking powder
  • 1 egg
  • 1 tsp Ceres Organics Garlic Powder
  • 1 tsp Ceres Organics Onion Powder
  • Ceres Organics Vegan Mayonnaise
  • 1 tsp curry powder
  • Fresh herbs
  • Salt and pepper to taste

method

  1. Drain the canned corn and combine all the ingredients into a bowl and fry off in batches.
  2. Dry off excess oil on a paper towel and serve with some mayo and fresh herbs.
