sweet spiced kūmara pie

Try our version of a Kiwi pumpkin pie using sweet kūmara. This dessert is filled with a range of delicious spices with a velvety texture that melts in your mouth

ingredients

  • 1 ½ sheets GF Pastry (short crust or puff)
  • 750g orange kūmara
  • ½ cup Ceres Organics Coconut Sugar
  • 1 cup Ceres Organics Coconut Cream
  • 1 tsp Ceres Organics Ground Cinnamon
  • ½ cup white sugar
  • ½ tsp nutmeg
  • 1 tsp ground ginger
  • 3 Tbsp Ceres Organics Corn Starch
  • ¼ tsp ground cloves
  • 1 cup vanilla coconut yoghurt

method

  1. Preheat the oven to 180ºC. Roll out the pastry on the bench to the appropriate size to fit your pie dish, then line the pie dish with the pastry. Set aside.
  2. Prick the kūmara with a fork the place on a plate in the microwave. Microwaved for 10-15 minutes until soft in the centre.
  3. Scoop out the flesh of the kūmara and place in a blender with the coconut sugar, coconut cream, sugar, nutmeg, cinnamon, ginger, corn starch and cloves. Blend on high speed until smooth.
  4. Pour the kūmara filling over the pie dish and smooth over with a spatula. Bake in the oven for 45 minutes.
  5. Cool the pie, then top with the coconut yoghurt. Slice and enjoy!
